Ingredients
- 3 Beef Stock Powder, Single Stock Cube
Method
- Cut the whole Beef Shin into large pieces.Â
- Mix half the flour with the salt and coat the beef well, patting to remove any excess.Â
- Heat the oil in a pan.Â
- Brown slowly and thoroughly on all sides.Â
- Prepare the mirepoix vegetables and cut them all into fine brunoise.Â
- When all of the meat is browned add the butter to the pan and naper on the side of the stove.Â
- Remove the meat from the pan. Add the mirepoix and cook gently for 2 minutes.Â
- Add remaining flour and Tomato Puree and cook out.Â
- Add the beef stock and bring to a boil.Â
- Reduce to a simmer and add the beef to the pan.Â
- Cook in a medium oven with a lid for 2-2.5 hours.Â
- Check seasoning and serve when tender.Â
