Ingredients
- 300g Penne Rigate Dried Pasta
- 40ml Extra Virgin Olive Oil
- 1 Vegetable Stock Powder, Single Stock Cube
Method
- Bring a large pan of boiling salted water to the boil.Â
- Add the Pasta to the boiling water and cook for 10-12 minutes leaving firm.Â
- Remove from the pan and drain well retaining some of the cooking liquid.
- Cover the Pasta to keep warm.Â
- Prepare the Pesto.Â
- Add the Olive Oil to the pan to warm.
- Add the Pasta and heat through.Â
- Add the Pesto, Vegetable Stock and sufficient cooking liquid to make a coating sauce.
- Cook out and heat through for 1-2 minutes.Â
- Remove from the heat and season.Â
- Plate up and coat well with grated Parmesan and drizzle with Oilive oil.Â
