Ingredients

  • 100g Unsalted Butter
  • 2single Eggs, Single Raw Whole Medium
  • 100g Caster Sugar
  • 1tsp Vanilla Essence
  • 100g Plain White Flour
  • 2.5g Bicarbonate of Soda
  • 20g Icing Sugar

Method

  1. Brown the Butter in a pan and leave to cool.
  2. Whisk the Eggs, Sugar and Vanilla in a bowl to Ribbon Stage.
  3. Fold in the Sieved Flour and Bicarbonate of Soda.
  4. Pour in the cooled Butter and leave to stand for 10 minutes.
  5. Butter and Flour the Madeleine mould.
  6. Pipe the batter into the moulds, about 3/4 full.
  7. Cook on Gas 6 or 7 for 8-10 minutes.
  8. Remove from oven and dust with Icing Sugar.
