- 10single Eggs, Single Raw Whole Large
- 20ml Freshly Squeezed Lemon Juice
Method
- Separate egg yolks and egg whites.
- Use a very clean whisk and soup terrine, whisk egg whites until it starts to come together, add lemon juice.
- Add sugar gradually and continue to whisk to ribbon stage or what ever stage you require it to be for your dish.
