Method
- Melt the butter in a thick-bottomed pan.
- Add the flour and incorporate.
- Cook for a few minutes over a gentle heat without colouring.
- Remove from heat allowing the roux to cool.
- Gradually add the warmed milk and stir until smooth.
- Add the onion studded with cloves and bay leaves.
- Allow to simmer for 30 min.
- Remove the onion, pass the sauce through a conical strainer.
- Cover with buttered grease proof paper, to prevent a skin forming.
