Ingredients

- 75g Strong Wholemeal Flour!
- 225g Strong White Flour!
- 1tsp Cooking Salt!
- 1.5tsp Dried Yeast!
- 1tsp Black Onion Seeds Nigella!
- 2tsp Whole Sesame Seeds!
- Ingredients for Beef Burger

- 500g Minced Beef!
- 1 Brown Lentils, 400g Tin!
- 50g Black Pudding!
- 8 Back Bacon Smoked, Slice!
Method
- Grill the Burgers to re-heat them and prepare whatever fillings you would like: Relish, Salad, Gherkins, Cheese.
- Cut the rolls and add the fillings and top with the Burger.
- Add all ingredients to a mixer with a Dough Hook.
- Start the mixer and add water to bind to a dough.
- Allow the machine to mix on a medium speed for 5 minutes.
- Allow to ferment for 1 hour and then knock back.
- Divide into 4 equal size pieces.
- Roll into a ball and then flatten with the palm of your hand.
- Add to a well dusted baking tray.
- Brush with water and sprinkle over the Sesame Seeds.
- Allow to rise for 1 hour.
- Pre-heat an oven to Gas 6.
- Bake for 20 minutes until golden.
- Transfer to a rack and allow to cool.
- Drain the Lentils, wash with water and dry on Kitchen Roll.
- Trim the Bacon, removing the eye meat and finely chop the remainder well and add to the Beef, Lentils and crumbled Black Pudding.
- Season and mix well. Cook a little, taste and correct the seasoning.
- Divide into 4 Burgers (about 7.5oz each) and shape with wet hands.
- Dry fry in a very hot pan to sear and slightly blacken each side.
- Complete cooking in the oven.
- Grill the Bacon eye meat.
