200g Cajun Spiced Bread Crumb Coating
Method
- Prepare the chicken for sautee or other into 8 equal portions.Â
- Slash the chicken skin to allow the flavour into the meat.Â
- Mix the flour and cajun seasoning together.Â
- Prepare the Egg Wash and Cajun Bread Crumb.Â
- Pane the chicken pieces ensuring a thorough covering.Â
- Place individually on a tray and chill for 10 minutes.Â
- Preheat the oven to a medium heat.Â
- Drizzle with vegetable oil.Â
- Cook in the oven for 20 minutes.Â
- Remove from the oven and leave to rest.Â
- When ready to serve deep fry at 160C Â for 2-3 minutes until crisp.Â
- Drain well on absorbent paper and serve.Â
