- 1single Bouquet Garni, Single
Method
- Chop up the bones, remove any fat.
- Place in a stockpot, add 1/2 the cold water and bouquet garni and bring to the boil.
- Skim, wipe round sides of the pot and simmer gently.
- Add the washed and peeled whole vegetables.
- Simmer for 6 hours.
- Add the rest of water half way though Skim and strain
