Method
- Roast lamb bones at 220 deg C for 40 mins or until brown.
- Wash, peel and roughly chop all veg.
- In a saucepan melt dripping and sauté the carrots, onions and celery for 5 mins or until brown.
- Add the mushrooms and tomato puree and cook for a further 3 mins.
- When the bones are brown transfer to the saucepan and deglace roasting tray.
- To the saucepan add the stock, bay leaf and thyme and bring to the boil.
- Simmer for 2 hours, strain through a chinois and muslin.
- Transfer to a fresh saucepan, bring to the boil and thicken with cornflour. Season to perfection and serve.
