Method
- Bring the Water and Sugar to the boil.
- Reduce to a simmer for 10 minutes.
- Pestle and Mortar the Lemon Verbena. Add half to the syrup.
- Reduce the heat to it's lowest setting and leave with the lid off for 10 minutes.
- Add the grated zest of the Lemon and Lime.
- Add the juice from half the Lemon and half the Lime and the diced squeezed Lemon and Lime.
- Add the other half of the Lemon Verbena to the Syrup and remove from the heat.
- Leave to infuse for 2 hours.
- Pass through a fine chinois, then tea strainer and then cloth.
