- 60g Sweetcorn Kernals!
- 1 Cooking Onions, Medium, Chopped!
- 1 Red Peppers, Medium, Diced!
- 1 Carrots, Medium, Chopped!
- 80g Celery, Chopped!
- 1tbsp Olive Oil!
- 60g Fresh Peas!
- 300g Quorn Mince!
- 1 Vegetable Stock Powder, Single Stock Cube!
- 2tbsp Tomato Puree!
- 1tbsp Worcester Sauce!
- 1tbsp Cornflour!
- 1tbsp Water!
- 2tbsp Light Soy Sauce!
- Ingredients for Mash Topping

- 6tbsp Whole Milk!
- 600g Peeled White Potatoes!
- 200g Parsnips, Peeled!
- 1single Butter, Pat!
- 50g Cheddar Cheese Mild White, Grated!
- 2 Sea Salt, Pinch
- 2 Cracked Black Pepper, Pinch
Method
The parsnip can be substituted with sweet potato. You can boil the potatoes and parsnips, but steaming them tends to be faster and results in a better flavour. The onion, calery and carrot can be blitzed in a food processor to a finely chopped consistency to save time!
Mince Filling Method
- Steam the peeled potatoes and parsnips until cooked
- Whilst the potatoes are cooking;
- Heat the olive oil in a large saucepan
- Gently sweat the onion, carrot and celery until soft
- Half the carrot and celery should be very finely chopped (blitzed)
- The other half should be finely diced
- Add the finely diced red pepper, sweetcorn and peas
- Defrost the vegetarian mince in a microwave and add to the pan
- Make up 400ml stock with the stock cube add this
- Add the Worcester sauce, tomato puree and soy sauce to the pan stiring all he the while
- Mix the cornflour with 1tbsp water to form a paste and add
- Simmer the mixture until the sauce thickens and the vegetables are cooked through
- Season with salt and black pepper to taste
- Spoon the mixture into a casserole dish
Mash Topping Method
- Pass the cooked potatoes through a ricer or mash until smooth
- Add the butter and milk and mix thoroughly (add more to taste)
- Season with salt and black pepper to taste
- Carefully spoon and spread the mash over the mince mixture
- Fluff/Plough the mash topping with a fork
- Top with grated cheddar
- Bake in preheated oven until topping is golden
- Serve with steamed vegetables or baked beans!
