A thick pate of chopped mushrooms cooked with onion and thyme. Duxelles is used as a stuffing or garnish and in the preparation of various dishes called a la duxelles. Traditionally used in Beef Wellington.

Ingredients

  • 500g Cup Mushrooms
  • 10g Curly Parsley
  • 50g Butter
  • 1 Banana Shallots, Medium
  • 15ml Olive Oil

Method

  1. Prepare and finely chop the onions and mushrooms.
  2. Melt the butter and cook the onions and mushrooms.
  3. Chop parsley and add together with the seasoning to the pan.
  4. Mix thoroughly and use accordingly.
