Method
- Peel courgette.
- Split onion and seal on stove.
- Wash all other veg.
- Chop veg roughly and place in a saucepan.
- Add all the other ingredients and bring to the boil, simmer for 20 minutes.
- Leave to cool with veg in liquor. Strain and store.
