Method
- Melt the fat or oil in a thick-bottomed pan.
- Add the flour and incorporate. Cook out to a sandy texture over a gentle heat without colour.
- Allow the roux to coo l. Gradually add the boiling stock constantly stirring until the Velouté is smooth.
- Bring to the boil.
- Add onion and allow to simmer for approximately 1 hour.
- Pass through a fine conical strainer.
