Method
- Roast chicken bones at 220 deg C for 20 mins or until brown.
- Wash, peel and chop all veg.
- In a pan melt lard and sauté veg for 5 mins or until brown.
- Add mushrooms and tomato puree and cook for a further three mins.
- When bones are brown transfer to the saucepan and deglace roasting tray.
- Add the stock, bay leaf and thyme and bring to boil.
- Simmer for 2 hrs, strain through a chinois and muslin.
- Transfer to a fresh saucepan, thicken with cornflour, season to perfection and serve.
